The Academy in Sale & Pepe magazine

The prestigious and widely distributed magazine Sale & Pepe (Salt & Pepper), directed by Laura Maragliano, has published a detailed article about our Academy in its March issue. In a long interview, President Paolo Petroni explained our Association’s aims and activities.
The article ends with two recipes codified by the Academy and executed by chef Mauro Fabbritagliatelle with traditional Bolognese ragù, and Milanese risotto.
