The prestigious and widely distributed magazine Sale & Pepe (Salt & Pepper), directed by Laura Maragliano, has published a detailed article about our Academy in its March issue. In a long interview, President Paolo Petroni explained our Association’s aims and activities.
The article ends with two recipes codified by the Academy and executed by chef Mauro Fabbri: tagliatelle with traditional Bolognese ragù, and Milanese risotto.
